[EP-tech] Remove EPrints package

Okay, so instead of keeping coming back and forth with little issues in my new install I think I've managed to compound a few problems with iterative changes. So, I'm going to start a-fresh and try to build things up in a different way, relying less on my old install and more on the changes I've picked up. Problem: I can't get EPrints to uninstall!

I've used a2dissite eprints and I'm using apt-get remove eprints, but the process falls over when it tries to remove the eprints user. It's constantly tied into a process - killing the process doesn't seem to do anything as it simply picks up another process and the uninstall won't proceed as it can't delete the user. Any ideas?
