As the item is marked as a book section (chapter) it is probably looking for 'book_title' from the eprint table, or possibly

You can see the main citation construction in ...../eprints3/archives/ARCHIVEID/cfg/citation/eprint/default.xml  and follow through for your item type to see what fields it includes and under what conditions.

Is  it possible to disable the default behaviour.  I  looked at one of the eprint entry that is producing the "In: UNSPECIFIED" issue and it appears the publication field is populated.
mysql> SELECT `eprintid` , publication, publisher  FROM `eprint` where
eprintid=2786;

Take a look at the citation file for an EPrint.  It's appearing for records without a publication (which is a required field, so the absense of it isn't handled gracefully).
