After deleting all lines with "binmode" (introduced ↵ with 3.1.1), like binmode(PAGE,":utf8"); in /opt/eprints3/perl_lib/EPrints/Update/Views.pm, and deleting all views in /opt/eprints3/archives/kuedoctest/html/xx/view (so that views are rebuilt automatically), character encoding was ok.
